I am up to H in the biscuit sections of the Edmonds Classic Cookery book. The next recipe is Highlander Biscuits. There is no recipe for them online, but they are are a cookie made with condensed milk and topped with a glace cherry. The cherries were quite expensive to buy, so they are not a cheap bake, but they are quite yummy. They have a taste of shortbread, but it they are not quite as hard as shortbread. The recipe said it makes 32, but I made only 17 out of it.

I am up to the 'G's in the biscuit section of the Edmonds Classics Cookery Book. Gingernuts! The recipe says it makes 25. I made 14. Maybe if I made them more flat they would have been closer to the recipe count.
When making the batter, I thought the biscuit would be quite crumbly, but they were quite nice and buttery. I liked them. They were a good dunking cookie. The lads don't really like ginger, so I had to consume most of them. The next recipe in the Edmonds Cookbook is the bikkies Duskies. They are chocolate biscuits with walnuts and coconut in the mixture. They also have chocolate icing with a sprinkle of coconut. They are very similiar to the Coconut Crispettes with added walnut. I like walnuts, so I prefer the Duskies. They are good cuppa tea dunkers too.

What was surprising about these, was that I thought I would be the only one to like these. They are dates, stuffed with walnuts and surrounded by a gingery dough. They ended up being quite a hit! These are really yummy, almost reminescent of a pudding. The next recipe in the Edmonds Classics Cookbook were coconut macaroons. I was expecting a recipe for the little round coloured macaroons you see in the cafes. I'm not actually a fan of those little round ones, but this recipe had a home made flaky pastry. The flaky pastry recipe is in the cook book as well. These were fun to try as I had never attempted my own flaky pastry before. It has a flaky pastry base, with dollops of raspberry jam, and a topping of stiff egg whites and coconut with a bit of almond essence. These ended up being little savory pie size and were nice but a lot. I think I would try and get smaller sized tins to try them again. They are like Louise slice, but with a pastry base. I did like them.
The next recipe in the Edmonds Classics cookbook is Coconut Crispettes. Made the recipe just as it said, and they were quite nice. Nice and coconutty with a bit of cocoa flavour. I liked dunking them in my tea.
The books says it makes 32, I made 18 out of the ingredients. Still on Biscuits category with the Edmonds Classics Cookbook.
The next recipe is Chocolate Cream Biscuits. There is no Edmonds online recipe for these. They are a chocolate cookie, that is rolled and cut into rounds with a cookie cutter. Then you make a chocolate icing and sandwich two together with the icing in the middle. The biscuits ended up being quite crunchy hard. They were great for dunking though, and they were soon gone. This has rolled oats, chopped dates, walnuts and crystallised ginger. I was expecting some chewy toffee like thing, going by the name, but they were these nice cakey bars. You have to like ginger to like these, which I do. The flavour combo of the spicy ginger, sweet dates and walnuts is really nice. Bruce really liked them as well. This was my first ever baking recipe I did as a kid. As an adult I had forgotten all about them until I saw this recipe.
They are pretty much foolproof and you get a lot for a little amount of ingredients. I used a triangle cookie cutter so they looked like Arnotts Shapes. The family LOVED them. I will never forget them again. |
