This is another Top 20 Edmonds recipe. I sometimes buy Belgium biscuits as I like the cookie and spice mix.
I went a little overboard in the red icing on mine. I also thought they were a little dry with just jam in between the cookie sandwich. I ended up putting white icing in the middle as well as the jam. Bruce liked them the most and wants me to make them again.

Baking through the Edmonds Classics Cookery book: The next recipe is Bran Biscuits.
The recipe says to use a cup of Flemings Bran Flakes, which don't exist anymore. I wasn't sure if it mean bran or flakes like cornflakes. I ended up chosing oat bran. I don't know if this was correct. The biscuits tasted very healthy and bland. It says you can have them with butter, which made them a bit better.... but no, I don't like bran biscuits.... with the oat bran anyways. When asked to photograph ball portraits in central Manukau, I was curious to see what backdrops were available. I am usually doing location shoots in country, gardens, or by water, not a city scape. It ended up being fun looking at possible photographic spots around the tall city buildings.

Bournvita is a hot chocolate drink like Milo. I only had Milo, so I used theat. Stuck to the recipe, no adjustments and they came out fine. We thought they were a little bit boring by themselves, so I ended up icing them and they were better. So after having to flat bikkie mishaps, I thought I would add more flour to this recipe....... and I made little rocks!! They weren't super hard when still warm and they tasted a bit like scones, and I didn't really like the flavours anyway. I wasn't go to go for a second attempt on this one, until I did some searching online and discovered there are versions of batchelors buttons that have jam in the middle. So I decided to retry the Edmonds recipe like it is written with the jam in the middle. They were quite yummy in the end. You definitely need the jam though I think.
AAAAAA it happened again!! So this was another two attempter. The recipe says 1/2 c of flour, but in the next batch I tried 1 C of flour and they came out a lot better. Anzac is one of my favourite bikkies for dunking in a cuppa tea.
This first batch still held together well, so I folded it up and cut up slices instead, and it was yummy. I also have 2 sets of measuring cups and I am wondering if one of the sets is not quite right in its cup measurements. After my flat Afghans, I thought I would add just a bit more flour, and I think they turned out fine. I liked them and so did my husband, but the boys were not so keen. The next recipe in the Edmonds Classics Cookery book was one of my favourite bikkies, Afghans. Crunchy cornflakes in a chocolate bikkie with chocolate icing and a walnut on top. The recipe is one of Edmonds top 20. Here is how mine turned out! Because I like Afghans so much, I wanted another go. This time I added more flour and less butter. But I think I took it a little too far. They were fine and edible, but a little too floury. Next time I make them I will add a bit more flour and do the amount of butter that it says.
Here is photos of the second attempt. Next recipe in the Edmonds Classics Cookery book is Pikelets. There is a couple of memory stories that go with it. One story by Greg Mitchell says he won a pikelet competition at his school calf club with this recipe. I remember there was a pikelet competition in our lamb and calf day at school too. I never entered that. I never had many pikelets when I was a kid. My Mother was a great gardener, but not very good at baking. I love pikelets now as a breakfast treat with maple syrup. I have a pikelet recipe I usually use, but I think I like the Edmonds one better. They are slightly more moist than my usual recipe. This recipe is listed as an Edmonds top 20.

To be honest, I usually find Blueberry Muffins a bit boring, so I made a mixed berry muffin. Funnily enough, online, Edmonds don't have a blueberry muffin recipe online. What they have is a fruit muffin recipe which is the same as what I made except I didn't do cinnamon. Here is that recipe: Edmonds Fruit Muffins These are nice with butter. They are not overly sweet. They make a nice Brunch item. I read that baking Gems became less popular because of baking Muffins instead...... I think I want to experiment with Gems more. Gems are more cake like in the texture. Muffins are a little bit more stodgey. Gems are smaller though and sometimes a big fat muffin is just what you crave.
