Next recipe in the Edmonds Classics Cookery book is Pikelets. There is a couple of memory stories that go with it. One story by Greg Mitchell says he won a pikelet competition at his school calf club with this recipe. I remember there was a pikelet competition in our lamb and calf day at school too. I never entered that. I never had many pikelets when I was a kid. My Mother was a great gardener, but not very good at baking. I love pikelets now as a breakfast treat with maple syrup. I have a pikelet recipe I usually use, but I think I like the Edmonds one better. They are slightly more moist than my usual recipe. This recipe is listed as an Edmonds top 20.
