The next recipe in the Edmonds Classics Cookbook were coconut macaroons. I was expecting a recipe for the little round coloured macaroons you see in the cafes. I'm not actually a fan of those little round ones, but this recipe had a home made flaky pastry. The flaky pastry recipe is in the cook book as well. These were fun to try as I had never attempted my own flaky pastry before. It has a flaky pastry base, with dollops of raspberry jam, and a topping of stiff egg whites and coconut with a bit of almond essence. These ended up being little savory pie size and were nice but a lot. I think I would try and get smaller sized tins to try them again. They are like Louise slice, but with a pastry base. I did like them.
